This is one of our most notable chocolate origins. Right out of the gate, you are greeted with fruity and floral notes that let you know this is a chocolate with personality and profile!
This cacao origin is made up mostly of aromatic Peruvian Local Natives, the VRAE and ICS genetics make up roughly 70% and 15% of this natural mix, respectively, with other Trinitarios and Criollos making up the rest.
Are you a little adventurous? Do you like flavour and a chocolate that grabs your attention? This chocolate isn't for all chocolate lovers, but if you are into espresso, single malts and assertive yet exciting flavours - this might be right up your alley!

Harvest Season: Mar - Aug
Tasting Notes: Fruity and floral with herbal notes.
Fermentation Style: 6-7 days in Tornillo hardwood boxes; daily bean rotation after first 2 days.
Drying Style: 6-8 days – sun then shade dried. On tarps and mesh drying shelves.
