Amongst all our customers, this bar consistently was a favourite! The cacao co-op these beans hail from is woman-owned and holds a rich history of the Junin region, in Peru. Ultra-premium quality and a We've made this as a classic 70% bar and needs no adaptation.
A complex herbal profile, we keep it simple and apply our classic 70% recipe with a medium roast profile to honour both the origin and the essence of chocolate flavour. If you are looking for a 'daily driver' bar that is sure to check all the boxes - you found your bar!

Fermentation Style: 6-7 days in Tornillo hardwood boxes; daily bean rotation after first 2 days.
Drying Style: 6-8 days – sun then shade dried. On tarps and mesh drying shelves.
